What makes black cherry stand out the most compared to other wood types is the way the color deepens over time. When first sawn, cherry has a light, pinkish hue. When exposed to sunlight and oxygen, it undergoes a transformation and darkens to a rich, reddish brown color.

What is the Difference Between Heartwood and Sapwood Cherry Tables?
Heartwood comes from the center of the tree while sapwood is closer to the bark. Heartwood is a light pink-red that darkens more quickly and dramatically than sapwood. As it ages, it turns into a darker red-brown color. Heartwood is more dense, durable, and resistant to insects than sapwood.
Sapwood also darkens with age. It starts as a creamy white or pale yellow and deepens over time. However, the contrast is not as great as heartwood. The lighter streaks in the wood pattern remain the same, creating a beautiful accent.
Since it is less dense, sapwood is less durable and more vulnerable to water damage. However, our finishes are high quality, so your solid hardwood has protection.
At Upstate Amish Furniture Gallery, we offer sap cherry and select cherry. Our sap cherry is actually a mix of sap and heart wood. This creates an interesting contrast that deepens with age. The sap parts will remain relatively light, while the heartwood darkens greatly over the first year.
Our select cherry lumber is completely heartwood. This means the whole piece will darken evenly as it ages. Select cherry is more uniform than our sap cherry option and is more of a traditional cherry wood. Select cherry pieces will change from light pink to a darker red-brown over the course of a few years.
Because heartwood shows the most dramatic color change and results in a rare red-brown hue, it is more expensive than sap cherry. However, both of our cherry wood options include heartwood. You just need to decide if you prefer a more uniform or contrasting color.
